Ingredients:

 

6x Caramelised Onion Jolly Hog Sausages

130g Puy Lentils

1 Small Onion, finely chopped

2 garlic Cloves, finely chopped

Olive Oil for frying

400g Tin Chopped Tomatoes

1 Bay Leaf

1 Tsp granulated sugar

2 tsps Chopped Thyme

 

 

Rinse & Drain the Lentils and place in a saucepan with 750ml Water and bring to the boil. Simmer for 15-20 mins until tender.

Meanwhile, fry the sausages on a medium heat in a pan with a little oil until browned all over, approx 8 mins.

In a separate pan, fry the onion and garlic in some olive oil for 5 mins until softened over a medium heat. 

Add the tinned tomatoes, sugar, thyme and bay leaf and cook for 3 mins until thickened. Add the sausages and mix through.

Drain the lentils keeping the cooking liquid. Add the lentils to the pan along with 200ml of the cooking liquid.

Cook over a low heat with a lid for 30 mins, stirring occasionally, adding a little more liquid if required.

Remove the Bay leaf, taste, season and serve!
